The first thing to do once you have all of your equipment is to clean it thoroughly using the steriliser. Make sure any residue from the steriliser is washed from the equipment before using.

  • 1 Empty the malt and brewing sugar into the fermentation container. A handy tip is to place the tin of malt into hot water as this makes it easier to pour. Fill the container with water, follow the instructions for exact measurements. The water is used to reach the desired temperature of 25°C. Finally add the yeast to the bucket and stir. Then place on the lid and leave for 4-6 days. This is where the yeast starts to react to the malt sugar, therefore turning your mixture into alcohol.
  • 2 Check whether your brew has finished fermenting by using the Hydrometer to check the gravity of your mixture. When the gravity reaches around 1010 and there are no bubbles, the fermentation is complete.
  • 3 Add the priming drops and then siphon your brew into either your bottles or a pressure barrel. Your bottles should be sealed and kept in a cool place such as a shed or garage and left for 2-3 weeks to clear. Bottles will clear quicker than a pressure barrel.
  • 4 After 2-3 weeks your home brew will be ready to drink and enjoy.

Skittle vodka

Ingredients & Equipment:

  • Vodka
  • Skittles
  • Coffee filter
  • A funnel
  • 5 empty plastic bottles


The first thing to do once you have all of your equipment is to clean it thoroughly using the steriliser. Make sure any residue from the steriliser is washed from the equipment before using.

  • 1 Separate the skittles into separate colours.
  • 2 Part fill the plastic bottles with vodka and pour your separated skittles into the bottles.
  • 3Put the lid of the bottle back on and shake your mixture. The longer the better. You will notice that the skittles will have already started to go white and the vodka change in colour./li>
  • 4 There will be some residue from the skittles at the top of the liquid. To get rid of this, place a coffee filter into a funnel and then place over a bowl. You may need to use more than one filter.
  • 5 Pour your mixture into the funnel, you may need to stop and start as the mixture can take a while to filter through. Repeat this for each colour.
  • 6 Pour your mixture back into the bottles, or into another container. Freeze overnight and then your skittle vodka is ready to enjoy.

Don’t use cheap vodka for this recipe, however you don’t need to buy an expensive bottle. A middle of the range bottle of vodka will work fine. But the higher the proof, the more flavour that will be extracted from the skittles.

Homemade Baileys

  • 350ml Irish whiskey
  • 250ml single cream
  • 1x 397g tin of condensed milk
  • 3tsp chocolate sauce
  • 1tsp vanilla essence
  • 1tsp almond essence
  • 1tsp coffee essence


Mix all of the ingredients together in a blender and then pour into a bottle. Keep it in the fridge and serve chilled.

Chilli infused tequila

  • 1L 100% tequila
  • 3 medium Chillies (Scotch Bonnet, Jalapeno or Habanero)


  • 1 Stem, deseed and slice your chillies.
  • 2 Pour the tequila into a sealable jar or bottle.
  • 3 Place the chopped chillies into the jar and reseal.
  • 4 Give the jar a swirl or shake and leave in a cool dark place for 2-3 days.
  • 5 Use a sieve to strain all of the chilli pieces and seeds from the tequila.
  • 6 Pour the tequila back into the bottle and chill before serving.

It is best to use a hot chilli for a more intense flavour but remember, the hotter the chilli, the less time it will need to infuse with the tequila. Wear gloves for slicing the chillies and wash thoroughly afterwards and avoid touching your eyes.




  • 1 Litre of Vodka (80-100% proof)
  • 10-12 unwaxed lemons
  • 1.5 cups of sugar


  • 1 Peel the lemons with a vegetable peeler. Try to only remove the skin with as little pith as possible.
  • 2 Put the peel into a sealable jar and cover with vodka. Reseal the lid and leave for anywhere between four days and one month. The longer you leave it to infuse, the stronger the taste of lemons.
  • 3 Using a coffee filter, strain the mixture to remove the peel and any bits.
  • 4 To make a syrup, mix the sugar with water and let it simmer until a syrup starts to form.
  • 5 Allow to cool and then mix the syrup with the lemoncillo mixture. Taste the mixture and if you want to make it sweeter you can make up more syrup.
  • 6 Pour the mixture into a bottle and then chill before serving.
